TROPICAL SALSA
1 lime
1 mango, peeled and diced
1 papaya, peeled and diced
1 avocado, peeled and diced
1 jalapeno, seeded & diced
1/2 sweet onion diced
2 tbs fresh cilantro, chopped
2 tbs olive oil
2 cups fresh baby shrimp (OPTIONAL)
Mix all ingredients in a medium bowl.  Squeeze lime juice over mixture and mix well.  Refrigerate for about 30 minutes before serving.  Serve over salad greens, as a dip or salad, or over baked salmon.  Serves 8.
