NOODLES with PEANUT BUTTER-GARLIC SAUCE
1 tsp sugar
2 tbs soy sauce
1 1/2 tbs wine vinegar
1 tbs sesame oil
1 tsp chili oil
3 tsp smooth peanut butter
4 tbs water
1 tsp garlic, minced
1 tsp scallion or green onion, thinly sliced
1/2 lb egg noodles (4-6 oz)
1/2 bag of frozen baby peas (optional)
Blend all ingredients except noodles in a large mixing bowl, stir or whisk vigorously and set aside.  If sauce separates, add 1 or 2 drops of boiling water, stirring slightly.  Bring 3 qts. of salted water to a boil, stir in noodles and cook to desired tenderness.  Drian noodles & rinse with cold water.  Transfer to large serving bowl and mix with sauce.  Serve cold or at room temperature.   Serves 2.
Optional:  add 1/2 bag of frozen baby peas to the noodles during the last 2 minutes of cooking.
