| GREEN BEAN SALAD WITH FETA | ||||||||||||||||||||
| 12 oz. fresh green beans trimmed 1 red onion chopped 2-4 tbs fresh cilantro, chopped 2 radishes, thinly sliced 3/4 cup crubled feta cheese 1/2 tsp dried oregano 2 tbs fruit vinegar (I use blueberry vinegar) 5 tbsp extra virgin olive oil 24 baby tomatoes halved (bryan or grape tomatoes) |

| Steam green beans for about 5 minutes or until just tender. Transfer beans to large bowl and add onions, cilantro, radishes tomatoes and feta. Sprinkle oregano over salad, grind pepper to taste. Whisk vinegar and oil together in a bowl and pour over salad. Toss gently together to mix well. Serves 6. | ||||||||||||||||||||
