PHONY ABALONE SOUP
1 can (15 oz) giant top shell (abalone-like shellfish), drained & sliced
1 cup celery, sliced
2 cups baby bok choy, chopped
2 cups mushrooms, sliced
2 green onions, sliced
1 red onion, chopped
1 container tofu (extra firm), cubed
2 cups snow peas, trimmed
1 tsp garlic, chopped
4 tbs soy sauce
3 tbs aji-mirin (sweet cooking rice wine)
1 can vegetable broth
3 cans water
salt & pepper to taste
Combine broth, water, soy sauce , top shell and mirin.  Bring to a boil, add all vegetables.  Reduce heat & simmer for 10 minutes.  Add tofu, salt & pepper and simmer for ten more minutes
